Okay y’all! I have had my fair share of pancakes in restaurants, at other people’s homes, and recipes that have claimed to be the best but this has to be the best of the best and I truly believe it is due to the tanginess of the buttermilk.

To say that this was easy is an understatement. I literally woke up one Saturday morning and trying to decide if we were going to have a healthy smoothie, scrambled eggs, or if we would splurge and have pancakes or waffles. Due to having only 2 eggs left, the decision was made. Pancakes it is!

As mentioned in my previous posts, I rarely (if ever) plan out my recipes because this is just not real life. As a working parent and wife, I try my best to keep my kitchen stocked but if I am out of something then I will place it on a list to be purchased for life and not a blog post. So when I put together a recipe, it is usually with what I have on hand.
With that said, what I had on hand this particular morning was powdered sugar, frozen strawberries, blueberries, lime juice, and granulated sugar. Check out my recipe for The Best Berry Compote for pancakes, or ice cream toppings.



The Best Buttermilk Pancakes Recipe
Equipment
- Skillet
- Rubber Spatula
- Rubber Whisk
Ingredients
- 2 c all purpose flours
- 2 tbsp granulated sugar
- 2 tsp baking powder
- 1/2 tsp baking soda
- 1 pinch seal salt
- 2 c buttermilk
- 2 large eggs
- 1 tsp granulated sugar
- 3 tbsp unsalted butter melted
- 2 tbsp unsalted butter for the pan
Instructions
- Mix the first 5 (dry)ingredients in a bowl, set aside
- Mix the next 4 (wet) ingredients: buttermilk, eggs, sugar, and butter together and whisk until blended.
- Add, the dry ingredients with the wet ingredients.
- Heat up the skillet and set on medium heat, add the butter until melted.
- Scoop approximately 1/3 c into the skillet.
- Let pancake cook approximately 1-2 mins on each side, or until you see bubbles form at the top of the pancakes, then flip and cook on the other side until golden. The cooking time can vary depending on how thick your pancake is.
