As usual, I utilized the ingredients available in my kitchen this morning. I noticed that there were 2 ripe bananas, a few dried figs that had been forgotten in the pantry, a french baguette I completely forgot about which was rock hard, and nearly expired milk stored in the fridge. AH HA! French toast it is!

Did you know that figs are an excellent source of fiber and truly nature’s candy! The seeds provide a slight crunch and nice texture to break up the traditional french bread recipe.
What I would change about this recipe
Admittedly, I made this recipe on the fly but that is usually when my creations turn out the best. The only thing I may do differently next time is to mix the bananas in with the french toast mixture. It would probably be best to mix in during the same time as when the figs are added. Just a little tip if you are looking to try out this recipe, which I am 100% convinced that you should!

Using Stale Bread
If your family is anything like mine, they tend to leave behind several bags of bread with just one slice remaining, as if it’s some sort of joke. However, I have discovered the ultimate solution! The most delicious french toast is made using stale bread. Just ensure that the bread absorbs as much of the mixture as it can. Although I haven’t personally tried overnight french toast yet, I believe it follows the same brilliant concept!
Fig French Toast Sweetened Condensed Milk Banana Crumble
Equipment
- 9 inch casserole dish
- 1 whisk
- 1 large mixing bowl
- aluminium foil or dish cover
Ingredients
For the French Toast Mixture
- 4 large eggs
- 1.5 c 1/2 and 1/2
- 3/4 c heavy whipping cream
- 1 c light brown sugar
- 1 tbsp vanilla extract
- 2 tbsp ground cinnamon add more if desired
- 1 loaf stale french bread (baguette) rough sliced
- 1 c chopped figs
- 2 large bananas (sliced)
For the Crumble topping
- 1/2 c unsalted butter melted
- 1/2 c sweetened condensed milk
- 1/3 c 1/2 and 1/2
- 2/3 c all purpose floiur
Instructions
For the French Bread Mixture
- In a large bowl, mix all ingredients except for french bread, figs, and bananas together
- Next, place the french bread in the mixture and let the bread soak up all of the mixture. Approximately 3-5 mins. depending how stale your bread is.
- Then, fold in the figs
- Transfer everything into the baking dish
- Top with the bananas
For the Crumble Topping
- Mix all the ingredients together in a small bowl
- Pour on top of the french bread mixture
Baking Instructions
- Bake 350 degrees covered for 30 mins, remove foil and bake for the remainder of the time.
